Red, White & Blue Ice Pops

Happy 4th of July everyone! I hope you all have wonderful celebrations planned with family and friends, or a relaxing day at the beach. That’s where we’re headed. When we come home, I know we’ll want to cool off with one of these vegan tri-color pops. Make a batch this morning and they’ll be ready this afternoon. Your kids can help by adding ingredients and turning on the blender–with supervision. Enjoy!

Ingredients:

  • 1 cup watermelon
  • 1 cup strawberries
  • 1 tablespoon berry preserves
  • 1/2 banana
  • 6 oz coconut milk
  • Juice of lime
  • 1 cup blueberries
  • 2 oz grape juice
  • 1 tablesppon lemon juice (optional)

Blend each layer in the blender. Pour watermelon-berry layer into 6 ice pop molds. Freeze for about an hour and 15 minutes. Then make the banana layer and add to molds; return to freezer. Make blueberry layer, add to molds and allow pops to freeze for 2 or more hours. Untold by running pops under warm water.
