Beet’em-Bust’em Smoothie

Makes 1 serving

11/4 cup POM Wonderful 100% Pomegranate Juice, divided

4 tablespoons chia seeds

1 ripe banana, frozen

1 tablespoon coconut chips

1 tablespoon cacao nibs

2 slices raw beet

 

  1. In a small bowl, combine 1 cup POM Wonderful 100% Pomegranate Juice, reserving remaining 1/4 cup, with chia seeds. Stir to coat chia seeds; refrigerate for 15 minutes to soak.
  2. Add this mixture to a blender with remaining ingredients; cover and blend on high until all ingredients are combined, about 1 minute. For a thinner smoothie, add a splash more pomegranate juice and blend. Enjoy!
