Pumpkin Spice Bites

Pumpkin spice is such a thing now. Is it overdone? Yes, for sure. Do I still like the warm flavor combo of cinnamon, ginger, nutmeg, allspice and cloves. DEFINITELY. It works well in so many different things, from muffins to smoothies to pie. And guess what friends? It also works in energy bites! And the best thing about these is that they require no baking, plus they’re easy to grab and eat before a workout.

A few of these bites give you just enough natural energy from the oats and Manuka to power your run or spin. And the pumpkin provides beta-carotene to help keep your immune system strong during these cold and dark months.

INGREDIENTS
1/3 cup pumpkin purée
1/2 cup almond butter
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
Pinch sea salt
1 tablespoon Manuka honey
1/2 cup rolled oats
1/4 cup cacao nibs, optional
1/4 cup pumpkin seeds
1. In a medium bowl, mix all the ingredients, except pumpkin seeds, together. Cover and refrigerate for 20 to 30 minutes, until firm.
2. While the mixture chills, grind the pumpkin seeds in a food processor (a mini works great for this!). Remove from the fridge and scoop up the mixture with a tablespoon. Roll into a ball, then roll in the pumpkin seeds. Enjoy! These will keep for about 4 to 5 days in the fridge.
