MAKES 24 SERVINGS | PREP TIME: 10 MINS | COOK TIME: 20 MIN
I’m a granola lover! How about you? There are a ton of them at the grocery store, but many of them are bogged down with extra sugar and some of the good ones are just too darn expensive. Here’s a version that is super satisfying, thanks to the chewy figs and crunchy walnuts, and also easy on your budget. And it’s the perfect project for these cold winter days.
2 cups gluten-free rolled oats
1/2 cup pumpkin seeds
1/2 cup walnuts, chopped
1/2 cup unsweetened coconut flakes
1/2 cup chopped golden figs
1/4 teaspoon ground cinnamon
Pinch of salt
1/4 cup maple syrup
1/4 cup extra virgin olive oil
- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the oats, pumpkin seeds, walnuts, coconut, figs, cinnamon and salt. In another bowl, whisk the maple with the EVOO. Pour the wet ingredients over the dry and stir until combined. Spread the mixture over the prepared baking sheet.
- Bake for 20 minutes, until golden. Let cool and then transfer to airtight glass jars. Enjoy!
