Fig-Walnut Granola

I’m a granola lover! How about you? There are a ton of them at the grocery store, but many of them are bogged down with extra sugar and some of the good ones are just too darn expensive. Here’s a version that is super satisfying, thanks to the chewy figs and crunchy walnuts, and also easy on your budget. And it’s the perfect project for these cold winter days.

Fig-walnut granola

2 cups gluten-free rolled oats

1/2 cup pumpkin seeds

1/2 cup walnuts, chopped

1/2 cup unsweetened coconut flakes

1/2 cup chopped golden figs

1/2 teaspoon ground cinnamon

Pinch of salt

1/4 cup Comvita Manuka honey, warmed for 30 seconds in the microwave

1/4 cup extra virgin olive oil

Preparation:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, mix together the oats, pumpkin seeds, walnuts, coconut, figs, cinnamon and salt. In another bowl, whisk the warmed Manuka honey with the EVOO. Pour the wet ingredients over the dry and stir until combined. Spread the mixture over the prepared baking sheet.
  3. Bake for 20 minutes, stirring half way through with a spatula. Let cool and then transfer to airtight glass jars. Enjoy!
