Double Duty Smoothie

I love a recipe that can be used in multiple ways, don’t you? So I came up with a smoothie that works equally well as a refreshing sip, and a frozen treat!

The only thing you need to change when you convert this from a smoothie into a pop is to add slices of kiwi to the ice pop molds. Easy peasy! It’s nearly spring and I can’t wait to cool off with these refreshing, kid-friendly pops. Even though these are vegan, you’ll be amazed at how creamy they are!

Makes 2 smoothies or 6 ice pops

8 ounces plain or vanilla plant milk

1 kiwi, peeled

1/2 ripe avocado

juice and zest of a lemon

1/8 teaspoon salt

1/2 of a baby cucumber

1 banana

1/2 teaspoon cinnamon

In a blender, combine all the ingredients. If serving as a smoothie, pour into a glass and enjoy! If making ice pops, peel and slice another kiwi into rounds. Place a kiwi slice into each of 6, 3-ounce ice pop molds. Pour 3 ounces of the mixture into each ice pop and freeze for 5 to 6 hours or overnight. Run the ice pop under warm water and cool off!
