Breakfast Cookies

Makes 36 cookies

Chocolate chip cookies are the ultimate feel-good treat. And you can feel great about starting your day with these because they’re loaded with good-for-you ingredients like oats, dates, chia seeds and tart cherries.

Ingredients:

  • 6 tablespoons unsalted butter
  • 1/2 cup packed light brown sugar
  • ⅓ cup all purpose flour
  • ⅓ cup whole wheat flour
  • 1 ½ cups regular oats
  • ¾ teaspoon baking soda
  •  2 TBSP chia seeds
  • ½ teaspoon salt
  • 2 eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped pitted dates
  • 1/3 cup dried tart cherries

  • 1/4 cup shredded coconut

  • 1/2 cup chocolate chunks (I used Hu)

Preparation:

  1. Preheat oven to 350°.
  2. Melt butter in a small saucepan over low heat. Remove from heat and stir in brown sugar until smooth. Combine flours, baking soda, oats, chia and salt in a medium bowl. Combine the butter mixture with the dry ingredients, and add eggs, vanilla, dates, tart cherries and coconut. Fold in chocolate.
  3. Mix well and spoon mixture by tablespoonfuls onto lightly greased (or parchment paper-lined) baking sheets. If the mixture falls apart, place it in the refrigerator for 10 minutes. Using wet hands to form cookies also helps! Bake for 12 minutes, until tops are dry to the touch. Cool completely on wire rack.
