Tropical Fruit & Yogurt Parfaits

Late winter has me craving the idea of someplace warm and sunny. And since I can’t jet to the tropics right now, I’m making these Tropical Fruit and Yogurt Parfaits from my book, Everyday Snack Tray. They’re super easy to make and deliver those vacay vibes!

Makes 4 servings

¼ cup macadamia nuts

1 cup diced fresh mango (about 1 large

mango)

2 cups vanilla whole-milk yogurt

1 cup diced fresh or frozen dragon fruit

(about ½ a dragon fruit)

1 cup diced fresh pineapple

¼ cup coconut chips (such as Bare brand)

Dried dragon fruit or dried mango

  1. Preheat oven or toaster oven to 350°F.
  2. Place nuts on a baking sheet and bake 5 minutes. Cool, chop, and set aside.

  3. Place ¼ cup of the mango in the bottom of each of the dessert or parfait glasses.

  4. Top the mango with ¼ cup yogurt and add ¼ cup dragon fruit.

  5. Add another ¼ cup yogurt, then top with ¼ cup pineapple, 1 tablespoon coconut chips, and 1 tablespoon macadamia nuts. Garnish with a piece of dried dragon fruit or mango and head to the tropics!
