Herbal Healer Smoothie Bowl

Hey smoothie lovers! How do you feel about savory smoothies and smoothie bowls? I love them!

When I’m in the mood for something refreshing and healthy, like a salad, but I want something a little different, I make a smoothie bowl. This gorgeous green one comes from my book, Smoothies & Juices: Prevention Healing Kitchen. It has inflammation-fighting power from the greens and turmeric, and boasts 9g of filling fiber. Try blending it up for lunch!


HERBAL HEALER SMOOTHIE BOWL

Ingredients:

For SMOOTHIE:

1 cup low-fat buttermilk or plain kefir or non-dairy milk
1/2 cup fresh mint leaves
1/4 cup cilantro
1 tablespoon lemon juice
1 teaspoon ground turmeric
1 cucumber, seeded and chopped
1 scallion
1/2 avocado
1/2 teaspoon black pepper
1/4 teaspoon salt

For TOPPING:
1/2 cup baby arugula
1/2 cup sprouts
1/4 cup crumbled feta cheese
1/4 cup fresh mint leaves
1 tablespoon cilantro sprigs
1 cucumber, sliced

Preparation:

1. Blend buttermilk through salt in a blender until creamy and divide evenly between two bowls.
2. Top each bowl with 1/4 cup arugula, 1/4 cup sprouts, 1/8 cup feta, 1/8 cup mint leaves, 1/2 T cilantro, and half of the cucumber slices. Serve immediately.
