Banana Bread Pancakes with Nutella

Makes 12 pancakes  (2 pancakes per serving)

Raise your hand if you love banana bread. How about Nutella? I see a ton of hands out there! In my opinion, there is nothing more comforting than warm, sweet banana bread. And few flavors are as mouthwatering as the combo of hazelnuts and chocolate in Nutella. I decided to combine what I love about both of these foods into one AMAZING pancake recipe.

Since both chocolate chips and Nutella both contain sugar, I didn’t want to add any additional sugar to the recipe. And with two ripe bananas in the pancake batter, I didn’t have to! You can certainly make the pancakes without the chocolate chips, but my little monkeys love them, so I included them. Either way, you’ll get delicious, fluffy pancakes with the whole grain goodness of oats, the potassium in bananas and the healthy fat and fiber of chia.

PS: In case you make more than your crew can eat, these are also amazing as a pre or post-run snack!

BANANA BREAD PANCAKES WITH NUTELLA

Ingredients:

½ cup whole wheat flour

½ cup almond flour

2 teaspoons baking powder

2 tablespoons chia seeds

½ cup semi-sweet chocolate chips

¼ teaspoon sea salt

 

2 large overripe bananas, mashed

1 teaspoon vanilla extract

1 egg, whisked

1 tablespoon extra virgin olive oil

1/2 cup oat milk, milk of choice or plain kefir

 

1/3 cup Nutella, warmed up

chopped walnuts, for garnish

Preparation:

  1. Combine the flours, baking powder, chia, chocolate chips and sea salt in a bowl. In a separate bowl, combine the bananas, vanilla extract, egg, oil and milk. Add half of the wet ingredients to the dry and mix. Add remaining wet ingredients and blend until fully incorporated.
  2. Heat a large skillet or griddle over medium-high heat and coat with unsalted butter or coat with cooking spray. Turn heat down to medium. Using a quarter cup measure, add the batter to the hot pan. Cook each pancake for 3 minutes, until bubbles begin to appear on the surface. Flip and cook for another 2 minutes.
  3. Stack the pancakes and drizzle with the warmed Nutella (30 to 40 seconds in the microwave should do it). Enjoy immediately!
