Almond Butter & Chocolate Chip Energy Bites

Makes about 10 Bites

The kids are back in school and that means that you need to be prepared for those super hungry after school hours. Not just for the kids, but also for yourself! These bites do double duty as an easy, throw together after school snack for kids and adults, as also as a pre- or post-workout treat. If you make them with sunflower butter instead of almond butter, they’ll be nut-free and you can even pack them in your kid’s lunchbox!

Chocolate Chip-Almond Butter-Honey

½ cup basic gluten-free granola

1/3 cup mini chocolate chips

1/2 cup smooth almond butter or sunflower butter at room temperature

2 tablespoons honey or agave syrup

¼ teaspoon ground cinnamon

1/3 cup chia seeds or sesame seeds

Combine all the ingredients (except seeds) in a bowl and mix well with a spatula. Cover and chill for 10 minutes. Use a tablespoon to scoop mixture, form into balls, and then roll in chia or sesame seeds. Store in an airtight container in the fridge for up to 5 days.
