Winter is still with us, and I don’t know about you, but I need some color to get me through the rest of this season! It’s been a very cold winter, with so much flu (yuck) and other illnesses. But at least we have Valentine’s Day to look forward to.

Whether you celebrate it with a sweetheart, your kids, or your friends, it’s a chance to show someone you care. This potassium-loaded smoothie definitely helps show you care because it’s packed with essential nutrients, including vitamin C, potassium (to keep that ticker healthy), and fiber. And while I’m not big on hiding ingredients, I will say that my daughter, Willa, didn’t even notice that I’d thrown some beets into this hot pink drink.

Speaking of beets, if you don’t want to take the time to make your own, there are a few companies who sell them already peeled and cooked. If you can’t find those, throw in a handful of baby spinach.

LOVE SMOOTHIE

Serves 2

Ingredients:

1 cup halved strawberries
1 blood orange, whole fruit and zest
1/4 cup roasted beets
1 cup unsweetened coconut milk
1/4 cup pomegranate seeds, plus an additional 1-2 tablespoons for garnish

Preparation:

1. Place the strawberries, blood orange and zest, beets, coconut milk and 1/4 cup of pomegranate seeds in a blender; blend until smooth.

2. Pour about 8 ounces of smoothie into 2 glasses. Garnish with additional pomegranate seeds and serve.
