Summer Reboot! Cantaloupe Coco-Mango Smoothie

OK, it finally got hot enough here for me to want to keep my Vitamix on the counter full time. When I have the luxury of going out on an afternoon run, I don't really like sitting down and eating lunch afterwards (too many things to do!), but I'm down with drinking my lunch. Here's what I came up with today: The summer version of my Coco-Mango Smoothie from Eating in Color. I'll call this one Cantaloupe Coco-Mango Smoothie. Remix!

 

I love the tropical mix of mango and coconut and the addition of cantaloupe provides extra hydration for the summer months. This smoothie contains over 100% of the vitamin C you need for the day, plus beta-carotene from the mango and the cantaloupe. In addition to being a powerful antioxidant, beta-carotene may also help protect your skin from the sun and give it a healthy glow. Now that's beauty in a glass!

 

 

 

Cantaloupe Coco-Mango Smoothie

Makes 1-2 servings (1 if you're using this for post workout; 2 if it's a regular snack)

1 cup cubed cantaloupe

1 cup diced mango

1 banana

1 tablespoon fresh lime juice

1/2 cup unsweetened coconut milk, chilled

1 tablespoon coconut manna (coconut butter)

coconut chips, optional

ice cubes, optional

 

1. Combine cantaloupe through coconut manna in blender and blend until smooth and creamy. Pour into a large glass and top with coconut chips. Enjoy!
