Makes 4 servings (2 meatballs/person)
1 pound ground turkey
2 cloves garlic, minced
1 cup Rudi’s gluten-free Savory Herb Stuffing
1 egg, beaten
¼ cup chopped Italian parsley
½ teaspoon sea salt
¼ teaspoon ground black pepper
¾ teaspoon Worcestershire sauce
1½ tablespoons olive oil
1. Preheat oven to 350°.
2. Combine the turkey, garlic, stuffing mix, egg, parsley, salt, pepper, and Worcestershire in a large bowl. Mix well.
3. Shape mixture into 8-9 balls using clean hands.
4. Heat the olive oil in a large sauté pan over medium-high heat and add the meatballs in a single layer. Cook for 5 minutes on each side, or until evenly browned. Transfer the meatballs to a baking dish and place in the oven for 10 minutes, until an internal temperature of 160° is reached. Serve with your favorite sauce and pasta.
