Mini Ciabatta Pizzas

Makes 8 mini pizzas


Ingredients:


1 bag of Rudi's Gluten-Free Ciabatta Rolls
½ cup pizza sauce
⅓ cup shredded mozzarella
½ cup steamed, chopped broccoli florets

Preparation:

1. Preheat oven to 400°. Place frozen ciabatta on a foil-lined baking sheet and bake for 8 minutes.

2. Remove rolls from oven. When rolls are cool enough to handle, remove the tops of the ciabatta rolls with a bread knife; discard tops or use for another purpose.

3. Place rolls back onto the baking sheet. Spread 1 tablespoon of sauce over the tops of the rolls, sprinkle with 2 teaspoons each mozzarella, and top with 1 tablespoon of the chopped broccoli. Place rolls back in oven for an additional 2 minutes, or until the cheese has melted. Serve hot.
