About two years ago I posted about refinding a beloved recipe for Double Ginger Crinkle Cookies that had originally run in the Washington Post back in the nineties. But then I redid my website last year, wiping out all of the older posts. Of course when I wanted to whip up a batch today for a pot luck dinner at my daughter's school, I was once again out of luck.

Ahh, but the power of the Internet is mighty, and when I searched for the cookies again, I actually found my old post! So, here I am reposting the original recipe and taking in the divine, spicy scent of these wonderful cookies. I hope you try them and I hope you enjoy! Oh, and today I tried substituting coconut sugar for half of the regular sugar and it worked great.

[from my original post in December 2010]

I remember finding a recipe for Double Ginger Crinkle Cookies in the Washington Post when I lived there in the late nineties. It was the perfect recipe: A soft, molasses-rich dough studded with plenty of chunks of crystallized ginger. I made that recipe for years, but after years of moving and editing my kitchen tools and cookbooks, then newspaper clipping finally got lost.

This morning I was tooling around the Internet, just seeing if by chance the Post had republished my beloved recipe. They hadn't, but someone with a blog called The Sheep Free Knitter had, and boy was I delighted! You will be too once you give these babies a try. They bake really quickly, so be careful not to let them get overdone--they lose that yummy softness. Enjoy and Happy Holidays!

Double Ginger Crinkles
From Washington Post 12/1/99
makes 3 doz. cookies (I get more than this, maybe mine are too small)
2 cups plus 2 Tblsp flour
1 1/2 tsp baking soda
1/4 tsp salt
2 tsp ground ginger
3/4 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp ground allspice
3/4 cup veg. shortening (I use Spectrum organic, nonhydrogenated) or unsalted butter, softened
3/4 cup plus 2 Tblsp sugar
1 large egg
1/3 cup unsulphered molasses
1 1/4 tsp vanilla extract
2/3 cup packed chopped crystallized ginger
1 1/4 cups sugar blended with
1/4 tsp ground ginger and
1/8 tsp ground allspice
(I only used 1/2 cup of sugar for the rolling – with the usual spices – and I still had sugar leftover. Go figure.)

In a large bowl, combine the flour, baking soda, baking powder, salt, ground ginger, nutmeg and allspice. Set aside.

In a large bowl with an electric mixer on medium speed, cream the shortening for 2 minutes. Add the sugar in 2 additions, beating for 1 minute after each addition. Beat in the egg. Blend in the molasses and vanilla. Reduce the speed to low and add the flour mixture in 3 additions, beating just until the flour is incorporated after each addition. Stir in the crystallized ginger. The dough will be very soft. Cover tightly and refrigerate until firm enough to handle, 3 to 4 hours. (If necessary, transfer the dough to freezer until firm, about 1 hours.)

Preheat oven to 375. Line several baking sheets with parchment paper.

Form the dough into balls of about 1 Tblsp. Roll each ball in the ginger-sugar mixture and then place them 3-inches apart on the prepared baking sheets.

Bake the cookies for 12 to 13 minutes or until set. During baking the cookies will puff, then deflate and form crinkled surfaces. Cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely. Store in an airtight tin.

New Beginnings

<itunes:author>Frances Largeman-Roth</itunes:author>

I wrote the title to this blog and then immediately thought it sounded like I was going into rehab, and I nearly changed it. But I really do want to talk about New Beginnings, Fresh Starts, and the like. Since I left my magazine job two months ago, my life has changed drastically. Instead of sprinting like a mad woman from home to daycare to work and then work to daycare to home, I can now actually take complete breaths throughout the day.

Mornings are still as hectic and early as ever with a 7 month-old crawler and a 3 year-old busybody, but I'm able to control the chaos in a much less stressed, much more positive way. And yes, work and deadlines still beckon, but I can squeeze in a 10-minute cuddle with Leo or a spin class in the middle of the day. I'm lucky--I know it. And I definitely am relishing everything that comes with having the flexibility of working from home, including making baby food and cooking more healthy family meals.

I'll be updating you more frequently on everything I'm up to--and there should be some exciting news soon. One thing I can share is that I'm going to be Cooking Light's TV spokesperson. I'm thrilled because I'll get to talk about a magazine that has been part of my life for at least the past 15 years. I'll be sure to post upcoming segments on my events calendar.

I hope you've all got your own New Beginnings this spring. I'd love to hear about them!

The brand new CarbLovers Diet Cookbook offers up 150 amazing recipes, including the ones below, which are perfect for any holiday party. The cookbook also contains a baker’s dozen of recipes from celeb chefs, including Cat Cora, Michael Chiarello, Wolfgang Puck, and Guy Fieri.

The Smoky Oven-Baked Potato Chips (yes, you can eat chips on our diet!) are so good and soo easy to make. Smoked paprika gives just the right amount of zing to take homemade chips from basic to brilliant. Serve them with the Mulled Cranberry Cocktail, which delivers the flavors of the holidays in one little glass—and the color is gorgeous to boot. And then there’s my all-time favorite Oatmeal-Date-Chocolate Cookie. The dates add a moist, chewy texture, plus extra fiber and sweetness.

Go ahead and get a little taste of what The CarbLovers Diet Cookbook has to offer! Plus you're just much more relaxed about the entire experience and realize that if you don't have all the gear when you bring baby home, it's not a big deal. Little bitty ones don't need all that much at first, except lots of love.

But moms DO need stuff to make it easier for them to take care of a newborn while dealing with sleep deprivation, sore nipples, etc. So here's my personal list of the gear that is making each day a little bit more comfortable and enjoyable for me...and Leo too.

1. Oatmeal: This whole grain is unlike any other. It helps lower cholesterol, makes you feel full with fiber and Resistant Starch, and a warm bowl of it is like a hug from mom. Plus there’s a bonus for breastfeeding moms—oats actually help increase milk production. Though not scientifically proven, tons of moms and lactation experts have touted oats as a milk booster. It could be thanks to minerals in oats that help you relax. And that’s one thing that is proven—a stress-free mom makes a lot more milk than a stressed out one.

2. Keurig Brewer: Oddly enough, it's not usually the baby who wakes me up in the morning, but my 21/2 year old daughter. And she's often not in the sunniest of moods. So it's especially nice that I can have a hot, delicious cup of coffee ready in the time it takes to fill a sippy cup with milk. I just pop a K-cup into my Keurig Special Edition Brewer and press a button. Getting caffeinated has never been easier or tastier.

3. Orbit Baby Travel System: I used to rock a Bugaboo Chameleon. It was fabulous. But it was also really big and didn’t fold up easily. So with baby number two I’ve switched to Orbit Baby’s G2 travel system. I first fell in love with it because it’s so easy to use. Just strap baby into the car seat, then pop the seat into the stroller base or the car seat base. And it folds down with one hand. But beyond those great features, Orbit Baby also uses green fabrics and foams. I realized how important this was when Leo decided to use his chest strap as a paci. The fabrics are all Oeko-Tex certified, which means they’ve been independently tested for safety and pose no health hazards. Kind of important when baby is surrounded by that fabric for several hours each day. I feel like I’ve made the switch from a Lexus to a Prius, and I’m loving it.

4. Support for the Girls: If you’re a runner and a breast feeder, you’ve probably figured out that those two things don’t necessarily play well together. Your breasts are either incredibly engorged or resembling flapjacks. Either way you need some serious breast support. I’ve found that sports bras that zip up the front and have wide straps offer the most support. One that I love is Moving Comfort Women’s Grace sports bra. It’s made for women with C-D cups, and was actually designed for the needs of breast cancer survivors who are getting back to their running routine.

5. Aiden and Anais swaddles: I do not have great swaddling skills. In fact, when I brought Leo home from the hospital I had to Google how to swaddle a baby. But even I have mastered using the wonderful cotton muslin swaddle blankets from Aiden and Anais. The fabric is super soft, but has enough substance to make it easy to handle. And beyond turning baby into a burrito, the swaddles are also wonderful for shielding little ones from the sun, and shielding mom's breasts from strangers. They're also great as an on-the-go changing table and burp cloth. DIY ideas--when you’re done swaddling baby with them, turn the blankets into pillowcases or doll clothes. Just saying!

6. Lansinoh Lanolin: If you're breastfeeding, there is no way to prevent sore nipples. It just happens. But you can definitely prevent them from getting cracked and chapped with lanolin. Just a little dab after feeding will do ya. And it also helps tame flyaways, soothe chapped lips, and soften cuticles. Who knew?

7. Kindle for iPad: It's hard to believe, but just 2.5 years ago when I had Willa, my first child--the iPad didn't exist. Well, at least I didn't have one. I remember relying on the actual print edition of The New York Times and my favorite magazines to get me through non-stop feeding sessions. But now that I can access any book or magazine on my trusty iPad, I don't feel so lonely when a hungry little lion wakes me at 2:45 am.

8. Mama Mio potions: I used their Tummy Rub throughout both of my pregnancies and I’m happy to say that I didn’t get any stretch marks at all. But my skin is not looking its best right now and needs some TLC. Their Skin Tight product helps to smooth out crepey looking skin, while the Get Waisted cream helps your post-baby body look slim. I am slathering both of them on day and night and my belly is looking pretty darn good.

9. Hulu: Not that I’m an advocate for excessive TV watching, but hey, there are actually a lot of good shows on this season. So if I happen to miss Up All Night or Next Iron Chef, I can catch them the next day. I just wish they’d play on my iPad.

10. The Fabulous Four: Nope, not talking about Ringo, John, Paul, and George. I’m talking about Soap.com, Diapers.com, Wag.com, and the recently added Yoyo.com. Nearly out of diapers and wipes? No worries—just order now and the colorful Diapers.com box will arrive tomorrow. Just remembered the birthday party your daughter is attending this weekend and you don’t have time to run to the store for a gift? No prob—Yoyo.com will hook you up in time. I guess the thing that rocks so much is that you can shop across all four sites seamlessly. And for urban moms without a lot of storage, easy delivery is a godsend. And in addition to the mundane items like dish soap and diaper rash cream, momma can also add in a little luxury item (hello holiday gloss) for herself at Beautybar.com—a subsite on Soap.com.
I hope you're all getting some much-needed R&R and enjoying some of those all-American favorites. I thought I'd share some of the media clips I did this week. On Fox News I talked about the latest study on diet soda and weight. It seems there is a connection betweenweight gain and diet soda intake. While diet soda contains no calories, it can increase appetite and may trigger the body to go searching for more "real" calories elsewhere. I chatted with the 5 o'clock new team about it, and then came back the next morning on Good Day NY to dish some more with Greg Kelly and Rosanna Scotto.

And then on Saturday I joined the lovely Rebecca Jervis onCBS Early Show to talk about what triggers hunger. It's actually pretty fascinating to learn about how making changes to your environment--lighting, size of plates, how you store food--can make a big difference in your waistline. Basically very bright light or dim light can cause you to eat more, so go with 60-75 watt bulbs in your kitchen and dining room. And remember those plates Grandma gave you? It's time to dig them out and swap them for the huge 12" plates you're using now. And I wasn't kidding Rebecca when I told her that I eat my ice cream with a demitasse spoon! I also put it in a tiny round glass, which perfectly fits a 1/2 cup portion. Here's the clip. And remember, enjoy yourself, but don't make choices you'll regret come Tuesday:) And if you haven't bought burger fixings yet, go for bison--it's delicious and leaner than ground beef.
